Chocolate Chia Parfait
T his is the perfect holiday dessert, rich, creamy, elegant AND it’s good for you. Your guests will love it. And bonus: it’s really east to make.
Ingredients
Makes 3 double layer parfaits
- 1 1/3 cups unsweetened non-dairy milk
- 1/4 cup chia seeds
- 1/4 cup date sugar
- 3 tablespoons unsweetened cocoa powder (non-alkalized)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
Method
- Put all ingredients in a bowl and mix well
- Cover and let stand at room temperature for thirty minutes
- Stir and place in the refrigerator, covered, for at least 6 hours (longer is ok)
- Place alternate layers of pudding, unsweetened plant-based yogurt and fruit of your choice in a parfait glass, goblet or other suitable glass bowl
This is the perfect ending to a holiday meal!
